Kate and Lucia will be discussing our favorite foods that have been created through the fusion of multiple cultures and the history behind a specific fusion dish for each.
Episode 1
On the introductory episode of Fusion Feasting, Kate and Lucia discuss the rise of Tex-Mex, both in Mexico and in the United States. Specifically, we focus on nachos! Tex-Mex is often considered an American version of Mexican food, but as we search through the history of nachos, chili, and other Tex-Mex foods, we find that it is hardly so black and white. Tex-Mex is the product of Americans of Mexican heritage living in Texas creating Mexican style food with American ingredients.
Episode 2
Tikka Masala is an incredibly popular dish, "created" by a Pakistani chef in Glasgow, but is known as an Indian dish. Even though it lacks the characteristic heat of Indian cuisine, Tikka Masala is one of the most influential English-Indian dishes in the world.
